Refreshing Watermelon Slushie

If you are a busy working mom like me yet you don’t want to miss the goodness of your daily portion of fruits, making smoothie packs for the whole week is your best option. I would buy lots of fruits on my day off, peel and cut them, them put different combinations in ziplock bags. When you need a quick smoothie fix, just get one of your smoothie packs, add any other ingredients (I mostly add banana, baby spinach, greek yogurt, almond or oat milk and bee pollen). Since the fruits were frozen, there’s no need to add ice plus the smoothie it yields is so creamy you can practically eat it with a spoon! Yum! Fortunately, it’s watermelon season again! This means lots of watermelons are being bought and eaten as watermelon slices or chunks. I would also pack fruit snacks for work for the hubs and me!

I would buy at least 2 big watermelons, cut one up in chunks and make slushie packs. It’s a really refreshing way of enjoying fruits!

You will need:

frozen watermelon chunks

lemon juice from fresh squeezed lemon

1/4 cup water

strawberries, seedless grapes or cucumber (optional)

mint leaves (optional)

 

 

1. Take the slushie pack out of the freezer at least 15 minutes before you’re using it.

2. Put all ingredients in a blender (except for the mint leaves). Process in the blender.

3. Pour in a glass  and enjoy!

Oatmeal Cinnamon Pancakes

We have switched to healthier meals and that’s whyI have decided to change our regular pancakes to a healthier version: oatmeal pancakes. This recipe is so versatile since you can add any ingredients you fancy from bananas to raisins and even chocolate chips! You can also use buttermilk instead of regular full cream or skimmed milk. You can even substitute that with oat milk or almond milk (or even homemade applesauce) instead!

This has become my family’s newest breakfast and snack favorite! They like better the texture and flavor of the cinnamon oatmeal pancakes than the regular ones!

You will need:

3/4  cup rolled oats (processed in food processor)

1/4  cup whole wheat flour

2-3 tbsps. cane sugar

a pinch of salt

1 1/2 tsp. baking powder

1/2  tsp. baking soda

3/4 cup milk (buttermilk, full cream, semi or skimmed milk, almond milk, oat milk, applesauce. the possibilities are endless)

1 1/2 tsp vanilla extract

1 whole egg, lightly beaten

1 tsp. ground cinnamon

2 tbsps. olive oil

 

Directions:

1. Combine all dry ingredients and process in the food processor.

2. In a bowl, combine all wet ingredients and add to the dry ingrediets. At this point, you can add any other added ingredients such as chocolate chips, raisins, etc.

3. Mix well. Heat a pan, drizzle some olive oil in the pan and pour about 1/4 cup of the batter for every pancake.

4. Serve as desired (hot or cold, with maple syrup, honey, cream cheese or marmalade) and enjoy!

Mango-Papaya-Spinach Green Smoothie

If you have picky kids and would like to give them spinach like I do… sneaking those baby spinach to this smoothie was one idea I will definitely keep. The sweet yet tangy combination of mango, papaya and mandarin orange and their bright color definitely masked the spinach very well. My kids drank their glass of smoothie without asking me what’s in there. The only thing they said was “Delicious!”

You will need:

half cup diced papaya

half cup diced mango

half cup mandarin orange

a handful of baby spinach

2 cups oat milk

2 tablespoons oat bran

Just mix everything in your blender. Serve cold and enjoy!
