Whenever I run out of grocery goods or I am in a hurry to prepare something quick for a meal, I can always count on my bottled boiled chick peas. This is really great for summer as the tomato in the salad offers a refreshing taste to it. You can eat it alone with bread or with Boquerones fritos (fried cod). Or you can serve it with fried eggs, pan-grilled parma ham and bread!
For this recipe you will need:
1/2 bottle of boiled chick peas, washed and drained
1 white onion, peeled and diced
4-5 pear tomatoes, cut in quarters
1/4 cup pickled pitted olives
1 can of tuna flakes in olive oil
olive oil
vinegar
salt to taste
Directions:
In a deep bowl, just mix all the ingredients and season with salt, vinegar and olive oil to taste.
Quick and easy to make and very delicious, too! Plus, your body will thank you for the fiber! ^^)
