Puff Pastry Filled with Apples, Pears and Raisins

This is not my original recipe. I adapted this from the recipe of a popular Spanish chef Sergio Fernández who has a cooking segment in the TV show La Mañana de La 1. I adapted this recipe from their recipe. Their recipe called for apples, pears, nuts, vanilla and whipped cream for decoration. Mine has apples, raisins and cinnamon. While for the decoration, I used confectioner’s sugar and my italian meringue frosting.


You will need:
1 piece of puff pastry
2 small apples, diced
raisins
1/2 teaspoon cinnamon powder
2 tablespoons white sugar
Directions:


In a pan, sauteé the apples, raisins, cinnamon powder and white sugar. When done, set aside to cool down. Take your puff pastry out of the freezer and defrost while the filling is cooling down.


Once the puff pastry is ready, spread the filling on top of it and roll it away from you. you have to start rolling from the side nearest you.


Bake in a pre-heated oven, at 170º for 15 minutes. If you want your puff pastry to get a golden color, brush it with one egg white in the middle of the baking process.


Once the puff pastry roll is already cold, you can proceed and decorate it with your chosen frosting. I used this meringue frosting recipe.


You can make the filling for this pastry roll ahead of time. Feel free to use different combinations of fresh and dried fruits!


I made another batch of this recipe but this time, I used 1 diced apple, 1 diced pear, raisins, sugar and vanilla essence. I only used 2/3 of the puff pastry, though. The rest, I used for another recipe. 

And to make it even more easier and quicker, I just dusted it with confectioner’s sugar on top!
