Calamares a la salsa – Sauteed Squid in sauce

sauteed squid in sauceToday, I will share with you a recipe for Calamares con salsa great as main course dish and even as tapa! 

You will need:

Squid (I used about 4 medium-sized, cleaned and sliced)

3 cloves of garlic, minced

sweet paprika (you can use hot paprika also)

white ground pepper

1 laurel leaf

brandy and olive oil

This is so easy! 

Place some olive oil in your pan. Sautee garlic until light brown in color. Add the sliced squid, halved laurel leaf, 1 teaspoon of paprika, dash of ground pepper, salt and 1/4 cup brandy. Mix everything well making sure your paprika does not get burnt or you’ll get a bitter aftertaste. Let it boil.

Cook until liquid reduces. Don’t forget to stir every now and then. When the sauce has quite reduced in amount, transfer in a deep plate and serve hot!

Serve with rice or bread. Yum! Hope you like today’s recipe. Enjoy!
