He went home with 5 and brought it home so we can prepare something with it.
So, my mother-in-law and I went to work with the fresh squid. It was actually hard to clean it and turn it inside out (to make sure that inside it’s also clean) as it was really fresh. But if you don’t want or you don’t like cleaning the squid, then you can always buy the frozen and already cleaned ones!
We decided to make some of my MIL’s mean Calamares Rellenos. Whenever we make this dish, people would always say that it is really hard and complicated to make it. It’s actually very easy to make!
5 cleaned squid (head, tentacles, etc. sliced and diced)
Ground meat (we used ground beef and chicken meat)
chopped parsley, 4 hard-boiled eggs, minced garlic
1 pack of frozen boiled shrimps
onion, green pepper and peeled tomatoes (diced)
salt, black pepper, paprika, saffron, brandy or white wine
First, pre-heat your oven at 170º – 200º C.
Place olive oil in a pan. When the oil is already hot, place the ground meat in the pan. Season with a pinch of salt and freshly ground pepper. When the meat has already changed its color, add the sliced parts of the squid. After a couple of minutes, add the shrimps. Don’t forget to stir it! ^^) After a couple of minutes, add the parsley. Lastly, add two of the diced hard-boiled eggs.
Get one of the squid and stuff it with the filling. While stuffing, you can pinch the squid with the toothpick so the liquid gets drained and the stuffing won’t get watery. Close your squid with a toothpick as shown above.
Once you’ve stuffed all of your squid, place the squid in a glass dish, pour over it what was left of the filling. Nothing goes to waste! ^^)
In the same pan, place a tablespoon of olive oil. Add the onions. Once the onion is already transparent, add the green pepper. After a couple of minutes, add the peeled and sliced tomatoes. Add a dash of salt and freshly ground pepper. If you prefer a thicker sauce, add some bread crumbs.
Get your turbo mixer to make sure your sauce won’t have any big chunks in it. In the glass baking dish, add what has remained of your parsley, paprika, powdered saffron, white wine or brandy.
Pour in your sauce and the fish broth. Place it inside the oven. I placed mine in the lower part of the oven. Cook in the oven for 45-60 mins. depending on the size of your squid.
Serve with rice, bread or baked potatoes and hard-boiled eggs. Enjoy!
