Today, we had some friends over for lunch. This will be the last gathering we’re having before the tourist season officially starts for us. The hubs and I only work during the tourist season here in Mallorca (May – October). The rest of the year, I am a SAHM and enjoys it a lot. We also enjoy the rest of the year to catch up with friends and family because during the tourist season we work 7 days a week, no days off. We were busy preparing the units (apartment) of Villa Portillo which we rent to tourists, taking advantage of the 2 weeks spring vacation of my kids.
Today, we had a really delicious Paella Mixta (vegetables, seafoods and meat). Look at that!

We served it with lettuce salad.
It was delicious! We made paella good for 12. We were only 8 but practically, nothing was left after we attacked the delicious paella! ^^) The kids had these Lemon Shortbread cookies dipped in chocolate I made using this recipe. They loved it so much thay the cookies were gone in a minute!
I still had some melted chocolate left after dipping the cookies into it so I dipped some fresh strawberries in it. Everybody loved it!
We also had carrot cake for dessert which I made using this recipe from Cookin’ Up Good Times. I did not frost it but I just decorated it on top with what was left of the melted chocolate. It was incredibly delicious! It was a hit with the guests!
We had a lovely time though it rained then snowed in the afternoon. With the fireplace on, we were warm and cozy!
